Despite the name and appearance of the Juniper Berries, they are in fact considered a spice, and commonly used in European cuisine, such as German, Scandinavia and regions of France.
The juniper berry is commonly used in dishes containing rich meats, such as game. Juniper berries are also used to flavour gin, which is the best way to describe their flavour. Due to their rich flavour they should be used sparingly when cooking. You can also use Juniper Berries as part of a pickling sauce for shallots, along with allspice berries, black peppercorns and mustard seeds.
