It is made in both dry and sweet styles: fino, manzanilla, palo cortado, amontillado, and oloroso being dry, Pedro Ximénez and moscatel being sweet. Jerez-Xérès-Sherry is a protected designation of origin and similar Australian made wines are sold under the name "apera".
