Vinegar Shrubs

Shrubs, also known as drinking vinegars, derive from methods of fruit preservation in colonial-era U.S. They have now been reinvented to offer lively combinations of intense fruit and tart acidity. A shrub is a combination of sweet and sour flavours: vinegar, sugar, and fruit, sometimes with additional aromatics.

In drinks they bring both sweetness and acidity, effectively pre-balancing the two and introducing additional fruit flavour. Use as a cordial with soda for a knockout non-alcoholic drink, or simply shake with a spirit and serve over ice as a fruity sour.

Syrups must be refrigerated after opening.
