Fresh grapefruit is peeled and torched to extract bitter yet refreshing citrus notes.
Just a hint of local Bulls Bay Saltworks sea salt brings out savory caramel notes and rounds out the flavors.
Works well with white spirits. Top with soda water.

Creative techniques are used to maximize flavors; things like roasting, burning, smoking, barrel aging, percolating and macerating for an amazing end product.

Marmalade in a tonicBy: Elise on 8 January 2016I love this one and keep coming back for more - it's like grapefruit marmalade that's been taken just to the edge as it's cooked. Not too sweet. I drink it with soda mostly, sometimes add gin.
