Citric acid is found naturally in several fruits and berries and is commonly added to many delicious foods and beverages as a preservative or is used for flavouring. Citric Acid and Ascorbic Acid are quite similar and as compounds are frequently used in food and beverage processing. There are flavor differences that can affect which food or beverage products they are used with. Ascorbic acid has a more bitter, acidic flavor, while citric acid has a more tart and sour flavor, so it’s often preferred to enhance the flavor of foods like beverages, desserts, candies and even medicines.
Only Bitters chose to import Acorbic Acid over Citiric Acid as all tonic sysrups use a great degree of citrus already, so have the tart and sour flavor profile present. It also allows color ro remain constant in your syrup once opened.
