Every summer Devoille harvests wormwood they grow in the hills above Fougerolles to make this classic verte (green) absinthe. The green colour comes from the traditional method of infusing the spirit with a carefully selected blend of botanicals after distillation, adding both herbal complexity and natural colour. Gold medal winner at the 2018 Paris Concours Général Agricole.
A delicate balance of the absinthe "Holy Trinity"—grand wormwood, aniseed, and fennel—create a herbaceous alpine bouquet over low to medium bitterness. The anise is not overpowering, but contributes enough sweetness to serve without sugar.
The traditional Franco-Swiss way to serve absinthe is by slowly adding water to a sugar cube suspended on a perforated absinthe spoon, dissolving it into the spirit below.
Sugar is added to balance the bitterness present in a lot of absinthes, but also to bind the flavours. Water is added for three reasons: to dilute the drink, to dissolve the sugar (as sugar will not dissolve in alcohol), and to louche the absinthe. The louche is when the absinthe transforms from a transparent liquid to a milky, opaque one. This is because the anise flavoured essential oil, anethole, can only be dissolved in alcohol above 38%. So when water is added and it drops below 38%, the oil separates and becomes visible. This process also releases its aroma and adds texture, often changing the taste of the drink significantly.
About Distillerie Paul Devoille:
Founded in 1859 by Xavier Devoille in Fougerolles, France, the distillery was taken over by his son Paul in 1905 who expanded the business and began making absinthe. Over the 20th century the distillery added liqueurs to their range alongside absinthe and eau-de-vie, attending global trade fairs and increasing exports. René de Miscault, a distiller from Alsace, took over the company in 1985 and modernised operations, sending the historical equipment to be displayed in the Eaux-de-Vie Museum in Lapoutroie. Hugues de Miscault became general manager in 1992, growing the company through acquistions and the creation of new products. Devoille continues to add new products to their range and offers tours to the public, allowing a glimpse into the government recognised 'Living Heritage Enterprise'.
