Roast Pineapple Piña Colada

Roasted pineapple and a touch of cinnamon lends extra depth to this tropical classic.

 

60ml Tiki Lover's Pineapple Rum

60ml Roast Pineapple Juice*

30ml Lime Juice

30ml Coco López Cream of Coconut

4 dashes of Mister Bitters Fig & Cinnamon Bitters

 

Add all ingredients to a blender. Blend with half a cup of ice. Add extra ice if needed until a smooth, frozen consistency is reached.

Garnish with pineapple slices and a maraschino cherry.

 

*Roast Pineapple Juice

 

1 Fresh Pineapple

1 tablespoon Brown Sugar

1/2 teaspoon Black Pepper

 

Peel and then cut pineapple into rough chunks.

Toss with sugar & pepper.

Roast on a baking tray at 200°C until just starting to gain some colour.

Let cool and then run through juicer.
