Gum Arabic is powdered resin from two trees of the acacia family and is the defining ingredient in gum syrup, also known as gomme. Gum syrup imparts a silky texture to drinks, perfect for adding body and a plush mouthfeel to spirit-forward cocktails that can otherwise be a bit thin.

Gum Syrup

Yields ~2.1x the volume of water used.
Measure all by weight.

1 part gum Arabic
3 part water
6 part sugar

Combine the gum Arabic and ⅓ of the water in a container, stir, then cover and let sit in a cool, dark place until dissolved (approximately 2 days).

Once the gum mixture is ready, combine the sugar and remaining ⅔ of the water in a saucepan over low heat. When the sugar begins to dissolve, add the gum mixture and fold to combine. Immediately remove from the heat and let cool before transferring to a sanitised bottle. Store in the fridge.
