Never Never Distilling Co.’s Black Juniper Amaro is a collaboration with one of Australia’s greatest cocktail bars—Black Pearl. The Pearl’s own Shay Chamberlain and Matt Linklater worked with Head Distiller Tim Boast to create an alpine style amaro featuring roasted juniper.
The amaro combines three different juniper components: fresh juniper, roasted juniper, and juniper from the still’s vapour basket. All three are steeped in neutral spirit and then hand-pressed to extract maximum flavour. Dark and earthy characteristics are brought out by heavily roasting the juniper, adding bitterness and a slight menthol note to the final amaro blend. Traditional alpine herbs such as gentian and wormwood develop bitterness and length, creating layers of complexity that mingle with the dark toffee and toasted pine of the juniper.
Enjoy in a Boulevardier, mixed with cola, or simply over ice.
