Chinato is a style of aromatised wine where cinchona bark is added to a rich red wine, imparting bitterness and flavour. Giancarlo Mancino’s hybrid of vermouth and chinato begins with a base of Barbera d’Asti DOCG from Erede di Chiappone Armando to which is added Cinchona calisaya bark, and a sweetened blend of his three vermouths—Secco, Bianco, and Rosso. This creates a rich and deep aromatised wine perfect chilled or straight up as a digestivo, warmed like mulled wine, or used to elevate a cocktail.
