Chinato is a style of aromatised wine where cinchona bark is added to a rich red wine, imparting bitterness and flavour. Giancarlo Mancino’s hybrid of vermouth and chinato begins with a base of Barbera d’Asti DOCG from Erede di Chiappone Armando to which Cinchona calisaya bark is added, and a sweetened blend of his three vermouths—Secco, Bianco, and Rosso.
The palate is rich, deep and bitter with the notes of the red wine that gives to the Chinato all the characteristic to be a remarkable digestive and aperitif.
Enjoy on ice, or warmed like a hot toddy or a mulled wine.
