The folk at Bittermens love a great tonic water, but in their view it’s increasingly difficult to find one, even though it seems that every week there’s another producer of tonic water popping up. Their issue with the new garde of tonic waters is that they just aren’t tonic-y enough. They figure that it’s because there’s only so much bitterness that you can extract without using a bit of alcohol. Sure, if you’re making a soft drink, that’s a no-no, but they think that tonic water is at its finest when combined with some gin and a couple of cubes of ice. Combine three quarters of Commonwealth, an ounce and a half of your favorite London Dry Gin and 4-5 ounces of soda water to make what they think is the perfect gin and tonic.

Mixing Notes:

1 1/2 oz of London Dry Gin (Both Tanqueray and Beefeater work beautifully here)
3/4 oz Commonwealth Tonic Cordial
5 drops Bittermens Hopped Grapefruit Bitters
4 ounces of soda water
Grapefruit twist

This recipe makes a very bitter, very dry gin and tonic, just the way we like it. Now, you can certainly play around with the formula… Dropping the Commonwealth Tonic Cordial to 1/2 oz and adding in 1/4 oz of simple syrup makes for a very well balanced variant as well. We’ve even been known to throw a few dashes of maraschino into the glass to bring a bit more complexity.
