Sweet: Notes of vanilla and cocoa strike the tongue immediately with the sweet bitters. This is followed by a strong profile of flavours that lead to a broad and complex mixture. Adding this is great way to counteract strong liquored bitters and balance out overly citrus based cocktails. One of the more utilized and complex blends of the selection, it offers excellent flavour without added sweeteners.
Sour: Sour bitters come from a long line of citrus based bitters. Orange has long been a stalwart in the bitters world, however we have gone broad spectrum and added a great blend of other ingredients to add a greater depth of flavour. A great balance is provided as it is intentionally moved away from being overpoweringly sour. It allows us to leave out what others tend to use as a souring agent; citric acid. Often confused with overly sour ingredients, this is a favourite of many sommeliers, but misunderstood by many bartenders. Used correctly it is an anchor of balance, counteracting sweet heavy liqueurs and bitter amaros.
Salt: Abundant with flavour, the salt bitters has heavy notes of 4 differing bittering agents. first on the tongue is a fine blend of world class salts used to create balance and depth. This is followed by hints of cardamom and other specialized flavours to this bitter. This recipe lends equally to mouthfeel and to balance in most cocktail creations.

In the past, they’ve found cocktail bitters to be rather drastic, often taking attention away from the the rest of the cocktail. Bar chefs like themselves are faced with the challenge of choosing bitters that hopefully fits the cocktail creation. However, the people at Bar40 Bitters address this by providing complimentary bitters based on the five gustatory taste receptors. Each flavour includes the compulsory bitter component and is paired with either sweet, sour, salty or umami (savoury) flavour profiles. This empowers the bar chef or cocktail creator to chose the specific taste profile of their liking for their personalized cocktail creations.
