This Bitter Lemon Tonic is a drier, more mature version of the classic mixer inspired by the Italian soda Limonata. Top Note's commitment to whole ingredients comes through with a natural bitterness provided by cinchona bark and gentian and topped with a piquant tartness from lemon juice and peel. It makes a great alternative to lemonade with a fraction of the sugar.
Bitter lemon is an excellent mixer due to the presence of the 5% lemon juice and natural cinchona bark presenting quinine bitterness. This balance takes on the fruitiness of vermouth, or wines, fruit based liquors, and neutral spirits such as vodka. A classic mix is Gin Bitter Lemon. Sloe gin and club soda is an excellent addition for a rendition of a sloe gin fizz. Other interesting mixes include layering a bitter aperitif spirit and vermouth.

Use: For every 1 part Top Note Tonic, 5 parts liquor or soda water

Top Note Tonics are premium tonic and mixer concentrates with inspiration from European style mixers. Their flavors, when mixed with seltzer water, create traditional botanical tonics that make excellent aperitivo soft drinks.

Top Note Tonic concentrates are made with whole herbs and spices, many organic, real cane sugars, and citric acid to create their flavors. No artificial colors or preservatives are used in their products with 1/2 the sugar content of standard mixers and ginger beers. They are also gluten free.


Based in Milwaukee, Wisconsin, founders Mary Pellettieri and Noah Swanson have drawn upon their collective experiences, to start a company that will change the way people think about- and enjoy- sodas, and tonics. Top Note Tonics are the brain-child of Mary, who holds a BS in Botany, and has honed her craft, while working for 22 years in the craft beer business. During her time in beer, Mary has worked as a Sensory Specialist, a Quality Control Manager, and an R&D Manager. In her spare time, she further enhanced her beverage skills serving as a judge for several national beer competitions.  In fact, the name Top Note comes from Sensory science. The Top Notes are the ephemeral aromas found in wine, beer and spirits that make for a whole sensory experience.

The path to Top Note Tonic was through the hobby of home brewing. After 20 years of being away from home brewing, Mary picked up the practice again in 2011, interested in making an herb beer. She began to research the world of bitter inducing herbs- outside of hops. The complex variety of herbs used in Amaro, Vermouth, and bitter wines from Europe were intriguing. Mary soon abandoned her efforts to make an herb based beer, as the herbal infused syrups were much more interesting on their own. She began crafting herbal based beverage concentrates, that echoed the former days of soft drinks, when a ‘tonic’ was a bitter botanical drink made by pharmacists for health and vigor. Noah was the special taster, providing input and guidance in the many iterations of the recipes. This was the start of Top Note Tonics.

Mary’s background working with plants, bitters, and in the food and beverage industry along with Noah’s strategic business sense, solid management ability, and friendly, high-energy personality make the husband and wife team a dynamic duo: of hand-crafted tonics and bitter sodas.

    I gave my husband a sodastream for Christmas. TopNote makes lovely 'grown up fizz' - not sickly sweet and more subtle and complex in flavour. Perfect for a hot summer quencher.
